Trying to understand how I can switch between modulations in Ableton. I have some moving heads that are tilting/panning (using the generic instrument + LFO), on one track, but this modulation doesn’t stop when midi from a different track/instrument is fired. How do I do this if I want to have several LFO modulations in a project?

Beam effect devices, such as LFO, behave much like Audio Effects placed after Instruments in Live - processing of the lighting signal happens regardless of playback state and is not related to MIDI.

You can do this by toggling/automating the Device Activator of the different devices, or, if using LFO in Add mode, use the Depth parameter to control LFO intensity of each device instance.
